"The Bolero" Our Summer Barrel Aged Cocktail



Summer starts next Tuesday and we really need to move forward with the Barrel Aged cocktails at P&K. The Manhattan #1946 is great, but we really need to evolve the program forward. With that Sean and I have come up with our version of a Barrel Aged “Summer” Cocktail (No. 5 so far in the series). We called it the Bolero, named after the painting by Henri de Toulouse-Lautrec. The painting to me- just grabs a moment in time that still holds true to today, the best times in life are when you are surrounded by friends enjoying the moment and having fun.
So this is what we came up with.

Take 5 bottles of Mt Gay Silver, 1 btl Calvados + .75btl of Punt E Mes

Then we forget about for a month in some old seasoned Tuthillton Barrels. We let the booze chill out and taste it every Monday + take notes on the changing of flavors.
So today we decided it was ready,

We are serving in over ice with fresh sorrel and green apple. The freshness of the greens and apple really wake up the flavors.
