This Christmas Season at P&K has been the best ever for me. The amazing crew that works here does a great job running this crazy place every day. I think that this holiday season has been so great, due to all the hard work that everyone has puts in.

I know that sometimes I can flip out, be a little crazy, angry or sometimes just rude. BUT- The one thing I want everyone to know that works at the pub is how THANKFUL I am to have all of you here. What an amazing year…. THANK YOU

Festivus is TODAY

Festivus is a secular holiday celebrated on December 23rd. It was created by writer Dan O'Keefe and introduced into popular culture by his son Daniel, a screenwriter for the TV show Seinfeld as part of a comical storyline on the show. The holiday's celebration, as shown on Seinfeld, includes an aluminum "Festivus pole", practices such as the "Airing of Grievances" and the "Feats of Strength", and the labeling of easily explainable events as "Festivus miracles".

Celebrants of the holiday sometimes refer to it as "Festivus for the rest of us", a saying taken from the O'Keefe family traditions and popularized in the Seinfeld episode to describe Festivus as "another way" to celebrate the season without participating in its pressures and commercialism.

A big highlight happened last night in my blogging career. Dave Williams(guy on the left) told me that he actually reads this blog. So crazy, just when I was feeling really down and sad. Saying to myself "Why did I let James ever talk me into this blog shit...".

That was really nice of Dave to cheer me up. Dave is a great guy! He has a great sense of style and besides having a great girl too... He has an amazing beard. Just enough not too much. Mike on the other hand looks like a hippie that just rolled out of a box of trail mix at a phish show.

Congrats to Rob for winning the 2009 CLARK CUP. The Night was filled with lots of laughes and lots of Champagne. A true highlight for me is when I realized that Kurt really knows how to rock a classy camel toe.

Almost There

Twas the night before Christmas, when all through the house
Not a creature was stirring, not even a mouse.
The stockings were hung by the chimney with care,
In hopes that St Nicholas soon would be there.

The children were nestled all snug in their beds,
While visions of sugar-plums danced in their heads.
And mamma in her ‘kerchief, and I in my cap,
Had just settled our brains for a long winter’s nap.

When out on the lawn there arose such a clatter,
I sprang from the bed to see what was the matter.
Away to the window I flew like a flash,
Tore open the shutters and threw up the sash.

The moon on the breast of the new-fallen snow
Gave the lustre of mid-day to objects below.
When, what to my wondering eyes should appear,
But a miniature sleigh, and eight tinny reindeer.

With a little old driver, so lively and quick,
I knew in a moment it must be St Nick.
More rapid than eagles his coursers they came,
And he whistled, and shouted, and called them by name!

"Now Dasher! now, Dancer! now, Prancer and Vixen!
On, Comet! On, Cupid! on, on Donner and Blitzen!
To the top of the porch! to the top of the wall!

A bundle of Toys he had flung on his back,
And he looked like a peddler, just opening his pack.

His eyes-how they twinkled! his dimples how merry!
His cheeks were like roses, his nose like a cherry!
His droll little mouth was drawn up like a bow,
And the beard of his chin was as white as the snow.

The stump of a pipe he held tight in his teeth,
And the smoke it encircled his head like a wreath.
He had a broad face and a little round belly,
That shook when he laughed, like a bowlful of jelly!

He was chubby and plump, a right jolly old elf,
And I laughed when I saw him, in spite of myself!
A wink of his eye and a twist of his head,
Soon gave me to know I had nothing to dread.

He spoke not a word, but went straight to his work,
And filled all the stockings, then turned with a jerk.
And laying his finger aside of his nose,
And giving a nod, up the chimney he rose!

He sprang to his sleigh, to his team gave a whistle,
And away they all flew like the down of a thistle.
But I heard him exclaim, ‘ere he drove out of sight,
"Happy Christmas to all, and to all a good-night!"

London’s St. John


St John is a restaurant on St John Street in Smithfield, London, England. It was opened in October 1994 by Fergus Henderson, Trevor Gulliver and Jon Spiteri, on the premises of a former bacon smoke house.

Under Henderson's guidance as head chef, St John has specialized in "nose to tail eating", with a devotion to offal and other cuts of meat rarely seen in restaurants, often reclaiming traditional British recipes. Typical dishes include pigs' ears, ducks' hearts, trotters, pigs' tails, bone marrow and, when in season, squirrel. I think this year I might bring it down a notch, last year’s choice of “Wanted Dead or Alive” by Bon Jovi really did not raise the roof like I thought it would. Christmas Beer



“2 Turtle Doves", our newest Winter seasonal is in the 12 Beers of Christmas saga from BRUERY out of Orange County, Cali. This is a dark, somewhat roasty Belgian-style ale brewed with cocoa nibs, caramelized sugar and toasted pecans. (ABV: 12%)

A lot people come in the bar and order the beer with the highest alcohol, sacrificing flavor for a quicker and cheaper buzz. With this brew I have to feel pretty good for those people ordering one of the best Christmas beers I have tasted this year. 2 Turtle Doves does not get that much press due to the limited release, but once you taste the chocolate & pecans that are added during the brewing you will be telling everyone you know.

Gibson Cocktail : Bring it Back



House pickled onions are on the bottom right; we use Cider Vinegar, Toasted Fennel, Dried Chilies, Mustard Seed, Salt & Sugar to pickle the cocktail onions.

At the pub we do a version of the Gibson: Half Tub Gin & Half Stoli, a splash of dry vermouth and garnish with our house pickled onions.. So Simply

Charles Dana Gibson is most likely responsible for the creation of the Gibson martini (where a pickled onion serves as the garnish), the details are debated and several alternate stories exist. In one story, Gibson challenged Charley Connolly, the bartender of the Players Club in New York City, to improve upon the martini's recipe, so Connolly simply substituted an onion for the olive and named the drink after the patron. Other stories involve different Gibsons, such as an apocryphal American diplomat who served in Europe during Prohibition. Although he was a teetotaller, he often had to attend receptions where cocktails were served. To avoid an awkward situation, Gibson would ask the staff to fill his martini glass with cold water and garnish it with a small onion so that he could pick it out among the gin drinks. A similar story postulates a savvy investment banker named Gibson, who would take his clients out for the proverbial three-martini business lunches. He purportedly had the bartender serve him cold water, permitting him to remain sober while his clients became intoxicated; the cocktail onion garnish served to distinguish his beverage from those of his clients.

Jon yesterday skinned & de-boned some local organic chickens from our friend Geoff. He made a mouse with the dark meat, chopped up the breast meat into nice size pieces. He then mixed it all together with some truffles and mushrooms, and made a chicken “meat tube” with the skin holding the chicken together.

Mulled wine, variations of which are popular around the world, is wine, usually red, combined with spices and typically served warm. Historically, wine often went bad. By adding spices and honey, it could be made drinkable again. Nowadays, it is a traditional drink during winter, especially around Christmas.

Where's the Hen?




"Old Speckled Hen" was first brewed to celebrate the 50th anniversary of the MG car factory in Abingdon, Oxfordshire. Named after an old MG car which was used as the factory run around, they would park the old MG Featherweight Fabric Saloon outside the paint shop where it would normally get spattered in paint and so it became known as the ‘Owld Speckl’d Un’. This turned into "Old Speckled Hen" when the beer was unveiled. Since then the finely balanced beer with a distinctive rich malty taste and fruity aroma has attracted many fans, including the fox, who is always on the hunt for his Hen.

We have been out of Old Speckled Hen now for 1 week. The Old Speckle was the first pint poured at P&K over a year ago & it has ran continuously on tap 6 since day 1. If you see the Hen when you are out in the city, please tell it to come back to the pub.

Drinking Bourbon at Otto



Aged for an average of eight years, Black Maple Hill Small Batch Bourbon is bottled in small batches straight from Heaven Hill Distillery oak casks in Bardston, Kentucky. The technique and the fact that Heaven Hill is the largest, independent family-owned distillery in the state makes for an especially rare find of superior quality and taste.

In spite of its affordable price, Black Maple Hill is a nicely smooth bourbon. A 95-proof liquor, it expectedly has a bit of heat but it's met with a surprisingly mellow and dry finish with hints of butterscotch and oak.

Black Maple Hill also bottles a few older bourbons and ryes including an 18 and 21 year-old but those are quite a bit more expensive, albeit most likely worth it.

Stopped in at the Breslin yesterday in New York. Besides being one of the best designed bars I have ever seen… Chef April Bloomfield was in “chef whites” in the kitchen. The crazy thing was her apron was dirty and she was holding a pan (she was cooking). Seeing that was one of the highlights of the day for Jon and I.

What is the definition of a blini, and what origin are they?




Blini are small, yeast-leavened, buckwheat pancakes that originally come from Russia. Classically they are served with sour cream and caviar or smoked salmon.
